Apple Pie-Molly Carew would be so proud.

Yesterday afternoon Brian and I spent most of our time in the Kitchen. We got a new cookbook for Christmas, Pioneer Women, and decided to try out a couple new recipes. Luckily, we were making dinner for some friends of ours so we would have all this food to share. Thank God, because we all know Brian and I can consume large amounts of food just between the two of us.

For starters we had Bacon-Wrapped Jalapenos Thingies.

For Dinner we had the famous Ann Scott-- Black bean spinach Lasagna with a tossed salad.

And for dessert homemade apple pie. I even made homemade crust. Mark that down for starters!
I have a picture of it only I left the camera at our friends house...so I will post a picture as soon as I get it back.

It was also a Pioneer Women recipe from the book. It is not on her website. But, it is so easy and probably one of the best apple pies I've ever had.

Snow day!


Since It was a snow day...I felt it was only necessary to act like I was in grade school. I love to swing.


As most of you probably already know, Oklahoma has been hit with an ice/snow storm. We were so thrilled when we were informed we TOO would be getting a snow day. Luckily, up here in Edmond, we did not get as much ice as was thought; but more sleet. Of course, all that turned into ice overnight. It has been snowing non-stop today. We have around 5-6 inches of snow as of 6pm on top of 3/4in of ice. We decided to take a walk with Charlie and check out the damage, if any, around our neighborhood. Plus we needed to get out of the house before we went insane. There is only so much Wii you can play and daytime tv is awful.

We decided to let charlie off his leash on our walk. Surprisingly he did a great job.

Hello Ice!
Our beautiful home. We couldn't be any happier with our decision.


The past couple of weeks have been crazy busy for Brian and I. We both have been working late and putting in a lot of overtime with our jobs. It's nice to have a long weekend spent with our little family.

Just for laughs and giggles, Brian and I start a couples yoga class next week. We will keep you updated on how this goes. haha :)

Charlie boy and the cold weather.
























First let me start off by saying that UCO, which is where I work, was on a 2.5 hour delay today because it was cold. But, I of course showed up at 7:40am opened up the enrollment management section and was ready to go. All the while, wondering why no one else was at work. It was not until someone told me that the University was on a delay. My response, "A delay? What for?" " The cold weather." Well, that is a first for me. I came home cleaned the house, did some laundry, and watched some tv. I guess I need to start checking the new station more often when it's going to be cold. CRAZY! I will check in the morning because it is supposed to be about 10 degrees colder than today.

When I came home for lunch today, I was greeted by someone at the door...Charlie. In our house we have it set up to where he has full access to the backyard, our mud room, and the house (he goes through his dog door and straight into his crate). We have his crate sitting on a blanket so that it does not scratch up the floor. Charlie either got too cold (18 degrees & wind gust up to 40mph) or bored and figured out a way to move his crate to where he could get out. I was so proud of him, not because he managed to get out of his crate, but that he did not destroy anything. Once I left to go back to work, I arranged everything back to how it normally was when Brian got home he had a greeter as well.
